What things did you enjoy the most about your experience this week?
For this second week, I decided to pay more attention to what I ate as this was the highest contributor to my budget in the first week. I enjoyed trying new recipes that included less red meat, which also helps save money!
What were the main challenges you faced during the week?
I was planning on having more vegan meals but changing habits is not easy. I’m also a little wary of the range in footprint of some vegan products: for example, a popular purchase here in California is avocados, some of which are imported from Peru. I am guessing that focusing on local products would have a significant impact on one’s carbon footprint but can be difficult to track.
What were your main lessons learned of the week?
Replacing red meat with fish and white meat on days that I did not have only vegan meals helped to stay within my daily budget (although on the higher end of it).
